I made banana bread tonight for the first time in ages, it’s my absolute favourite! I can’t believe it’s been so long. I’ve had a few people ask me for the recipe so I’ve added it in below. Feel free to add chocolate chunks, 1/2tsp of vanilla extract or some walnuts if you like, but I like it just as it is!
Hot, straight from the oven, so so good. What are your die-hard favourites?
150g caster sugar
175g plain flour
1 1/2 tsp baking powder
125 softened butter
Loaf tin/liner, or extra butter to grease.
1)Preheat oven to 170
2)Mix the butter and sugar together in a bowl until combined well.
3)Mash the bananas in a separate bowl
4)Beat the eggs one at a time, and whisk into the egg/sugar mixture.
5)Using a wooden spoon, stir in the mashed banana.
6)Sift the flour/baking powder. Add a quarter at a time to the butter/sugar/egg and fold in well until all added.
7)Pour into a lined or greased loaf tin, and bake for 1 hour or until a skewer comes out clean.
If you have more willpower than me you can leave it to cool, or as I did cut a slab off as soon as it comes out of the oven! This is also great toasted too after a few days (if it lasts that long, mine invariably doesn’t!)
